Winemaker Christa von la Chevallerie. Filia - meaning daughter in Latin, is a culmination of a life long passion for the Paardeberg. The Paardeberg (or horse mountain) was named by the first European settlers to the Swartland, due to the abundance of Quaggas (Cape Mountain Zebra) that roamed its fynbos thicket covered granite slopes. Situated in the Swartland, with its verdant rolling wheat fields, its ancient soils hold a treasure trove of old bush vines. Total production of the 2012 vintage amounted to 485 standard (750m?) bottles. The hand-harvested clusters were chilled overnight in cold storage; gently whole bunch pressed the next day to release only the finest free run juice which slowly naturally fermented with only the assistance of the ambient yeasts present in the vineyard. The base wine was left on the lees for 6 months then bottled our special blend of liqueur de triage for the secondary bottle fermentation. After a period of sur lie bottle maturation of fourteen months, Filia 2012 was disgorged in October with zero dosage and sans sulphur to provide the drinker the ultimate unfettered reflection of this MCC’s granitic bush vine provenance.
