Many people automatically think of Tokaj when Hungarian wine is discussed. Tokaj has always been the prestige region of Hungary, producing sweet wines of rare intensity. But dig a little deeper and you will find amazing dry whites and reds as well. Not least the amazing Egri Bikavér. There are many legends and stories surrounding Egri Bikavér. One of the best known is certainly connected to the besiegement of the castle of Eger during Ottoman times, when Captain Dobó and those defending the castle were emboldened by red wine. The attackers were frightened by the Hungarians drinking bull’s blood, which was why they could fight against the superior force with such courage; thus, they ended up losing the battle. There are numerous versions of this story. According to the official version, the first mention of the connection between Bikavér and Eger wines was in a book of proverbs in 1851, which states: “Bikavér is the name given to strong red wine, such as that from Eger.” Jen? Gröber first wrote down the recipe for Bikavér in 1912 and is therefore considered its father. At that time, the blend consisted of Kékfrankos, Portugieser (Oportó) and Menoir (Medoc Noir). He is also credited with the spread of the Medoc Noir variety in Eger, which yields a unique aromatic style with notes of Muscat. Three types of Bikavér wines are made in Eger: Classic, Superior and Grand Superior. The organoleptic evaluation required to market these wines is carried out by the local wine district’s judging committee. Egri Bikavér has been listed as a ‘Hungarikum’ since 2017.
The family Thummerer is a top quality Eger producer. The family bought the cellar from the state in 1992 (the state had actually confiscated it from a count in 1949).
A blend of at least 50% Kékfrankos, an indigenous variety, with Bordeaux varietals Cabernet Sauvignon, Merlot, Syrah, and Cabernet Franc. The fermentation process took 18 months in wood barrels, with whole malolactic fermentation, which was followed by a long period of bottle maturing to maximalize its complexity.
Following their Hungarian traditions, the Tummerer Winery only makes the Superior, which is a top wine of the Bikavérs, when the vintage is at its most outstanding. The beauties of 2006 vintage were engaged with 50% Carpathian Basin and 50% world varieties. Bottled after 17 months aging, though the aging will continue for some time in the bottle. The winery is located in Noszvaj, 12 km from the center of Eger. The 2,000 sq. meter cellar, which was once an estate manor, was carved out by hand from the volcanic tufa rock. The old cellar with a new, 2,200 sq. meter cellar system that was also hewn from the volcanic tufa rock. The temperate and balanced climate of the cellar provides ideal conditions for wine aging.
