Louis Nel began his winemaking career at Vredendal Co-op. This was followed by stints with Vergelegen, Neil Ellis, Warwick Estate and Hidden Valley. It was at the start of 2010 that Louis decided to concentrate on his own winemaking venture under the Louis label. In 2011 Louis Nel made 600 bottles of Chenin blanc with chefs Bertus Basson from Overture restaurant and Craig Cormack from Sofia's restaurant in Somerset West. They wanted to create food-friendly wines with complexity. Louis noted 'He (Bertus) looks for pure flavour in his food so I make wines with pure flavour to match.' This wine was made from Chenin blanc grown in Stellenbosch. The timing of picking was critical, and these grapes were left to hang on the vine for a long time to develop complex fruit flavours.After picking and crushing the wine was settled, and then transferred to a tank to ferment naturally without the addition of yeast. After fermentation the tank stirred once a week to impart as much of the yeast character, and body from the lees as possible. The wine was left on the lees for 3 months, and then bottled using renewed bottled. The labels have hidden elements with a fork, knife, vine leaf and corkscrew hiding in the corners.
